Alongside her husband and two high school-aged children, Kim embraced her long-held dream of returning to farm life and making a meaningful impact.

The family purchased a historic homestead property nestled in Connecticut's southeastern region, an area renowned for its abundant produce, fresh seafood, pasture-raised meats, and world-class chefs. Their new venture Grijalva Cattle Co & 100 Acre Wood focuses on raising a herd of Texas Longhorn cattle and heritage hens, using regenerative and sustainable ranching methods.

Through their dedication and passion for sustainable farming, Kim and her family are not only contributing to the local food movement but also inspiring others to consider the impact of their choices on the environment and their communities.
